Parsley, so full of vitamins, minerals and antioxidants, is considered by many to be a super food. There are so many great reasons to enjoy this herb. I hope that this will make you think about your own possibilities. I think Parsley truly deserves to be liberated from its “garnish” status, don’t you?
Go Parsley !!!
Throw parsley with wild abandon on top of grilled vegetables, roasted potatoes, a cold green-bean salad, stews, soups, pasta, hot or cold grain dishes like couscous or quinoa or tabbouleh etc.
Here are some ways to add parsley to your daily meals:
- Add to homemade bread, rolls or bagels
- Use on homemade pizza, alone or with other greens
- Use in quiches, scrambles or frittatas.
- Make a pesto parsley as the star or make up a green blend of basil + parsley or dandelion + parsley
- Include in vinaigrettes or a delicious marinade.
- Make home-made juice combinations or add to morning smoothies to create high nutrient dense drinks
- Add flavour to sauces, soups and stews
- Use as a ‘rub’ to add flavour to poultry, meat and fish dishes.
- Chop to make a salad, or add to salads
Add Parsley Pesto to:
- Add flavour to sauces, soups and stews
- Perk up your omelettes, scrambles etc.
- Pasta
- "Feta bake" with tomatoes + feta (have you tried my version?)
- top BBQ meats or mixed with grilled veggies (or roasted)

Anyone will tell you-- make Pesto once.. you'll be thrilled at how easy it is -- and maybe, like me.. you'll find a new healthy addiction! Make this parsley pesto as stated below.. or change it up.. Add some basil to the parsley if you like, or Arugula or .. well the sky's the limit! It's delish with parsley as written below.. but we can be creative!!
Parsley Pesto
Ingredients
- ½ - 1 clove garlic
- ¼ cup walnuts or your fave
- 2 cups parsley
- ¼ cup olive oil
- ½ cup cheese
- Salt and pepper or other seasonings
Instructions

You may need to add more oil but I find that this amount usually works well.

Add cheese and process to combine.

Season with salt and pepper.

Note: Use all parsley or combine parsley with basil or arugula or spinach or.. your choice of greens..
Sometimes, if I'm going to make a larger batch, with plans to freeze it (in ice cube trays for easy portions later),I'll leave out the cheese. It's easy to add fresh grated cheese later.
