THYME SYRUP

This easy to make herbal remedy is an important part of my herbal medicine chest. I make it each year with fresh plant material from my garden. We can use fresh or dried herbs here. Make some to have on hand and be ready for those pesky irritating coughs.

Ingredients

  • Thyme small bunch of fresh leaves (I don't measure but this would be approximately 2 tablespoon fresh or 2 teaspoon dried)
  • 1 cup Water good quality pure water
  • ½ Honey raw, local if possible
  • Ginger root optional 3-5 slices of root
  • ½ Lemon optional, organic if possible

Instructions

  1. In a small saucepan, bring water to a boil.
  2. Remove from heat, add thyme and cover with a lid.
  3. If using ginger root and/or lemon, add to the simmering liquid.
  4. Simmer for 10-15 minutes
  5. Remove from the heat.
  6. When the liquid has cooled slightly, strain out the ‘solids'and reserve the tea.
  7. Pour ½ cup of raw honey into the jar and add to the ‘tea’.
  8. Stir to incorporate.
  9. Breathe in that glorious healing aroma!
  10. Cap the jar and label.

Recipe Notes

Store in the fridge. Use within 2 months.
