WILD WEEDS PESTO

Ingredients

  • 1 clove garlic
  • Pinch coarse salt
  • 1 cup fresh chickweed
  • ½ cup fresh chives dandelion, violets, (or your choice) chopped
  • ¼ cup walnuts or almonds, pine nuts, sunflower seeds.. your choice
  • ¼ cup freshly grated Parmesan
  • ¼ cup good quality olive oil

Instructions

  1. In a mortar and pestle, mash garlic with the salt.
  2. Add to a food processor and pulse with all remaining ingredients. EASY!
