Guajillo Paste

Delicious condiment paste, made from any chilis~ Guajillo in this case. Very tasty!

Ingredients

  • 12 guajillo chilis or more

Instructions

  1. Toast chilis in a cast iron pan for just a minute or 2 on each side, do not allow to burn.
  2. Allow to cool.
  3. Split the chilis and remove the seeds.
  4. Soak in hot water for 10 minutes.
  5. Remove from the water and puree into a smooth paste.
  6. Stores well in a tightly sealed jar, refrigerated for several months..

Recipe Notes

Use as a marinade, add to stews, soups, stock. Toss into pasta or grain or greens dish!
