Chilled AVOCADO SOUP with cucumber

Ingredients

  • 1 ripe Avocado  peeled, pitted, chopped
  • 1 English cucumber peeled, seeded, chopped
  • 1-2 green onions sliced
  • 1 cup plain yogurt full fat, fermented, best quality
  • 1 cup cold water
  • 2 tablespoon lime juice fresh
  • Sea Salt
  • Pepper freshly ground
  • Garnish with chopped cilantro leaves or  'snips' of chives.

Instructions

  1. Combine all ingredients (except salt, pepper and garnish) in a food processor or blender. Whiz it all together.
  2. Add seasonings  ENJOY!!

Recipe Notes

I've made this with sour cream as well and it's very yummy.
For Paleo peeps: Use full fat yogurt, fermented without any sugar.
