Aromatic Cauliflower Rice with '7 spice blend' and roasted veggies

Ingredients

  • 1 cauliflower organic when possible
  • 2 tablespoon coconut oil or avocado oil
  • 1 medium onion chopped
  • 1-2 garlic cloves minced
  • 1-2 tablespoon '7 Spice blend'
  • 1 teaspoon cinnamon
  • 1 cup corn kernels
  • 2-3 cups of combination of sauteed mushrooms roasted carrots, roasted red beets
  • sea salt + freshly ground black pepper
  • Optional: 1 tablespoon Coconut Aminos

Instructions

  1. Core the cauliflower and cut the cauliflower into 'flowerettes'.
  2. Place a few chunks of cauliflower into the food processor.
  3. Process until the chunks become 'rice - like'
  4. Dump the small cauliflower rice pieces into an adjacent bowl
  5. Continue to pulverize the cauliflower into 'rice' until the entire cauliflower is 'riced'.
  6. Add the oil to a pan add medium heat.
  7. Chop the onion and add to the pan
  8. Saute for a few minutes until onion is soft and lightly golden
  9. Add the garlic and stir thoroughly until well mixed
  10. Add the cauliflower rice and mix well. I love using my wooden spoons.
  11. Sprinkle the mixture with the 7 Spice blend and powdered cinnamon, if using.

Add the veggies. In this case, I used what I had on hand

  1. Fresh corn kernels, sauteed mushrooms, roasted carrots and beets.
  2. Mix well. Season.
  3. Add the coconut aminos if using. It does add an salty element to the dish so don't overdo it.
