Ingredients
2 radicchio headscut in half or quarters
½ cup olive oildivided
1-2 teaspoonsea saltdivided
2 teaspoonblack pepperfreshly ground, divided
1 -2 tbsp balsamic vinegarvaries according to size of radicchio
Instructions
Leaving the core intact, cut each radicchio in halves or quarters if large heads.
Brush with half of the oil.
Sprinkle with half of the sea salt and half of the freshly ground pepper.
Place on greased grill over medium-high heat; close lid and grill the radicchio until edges are crisp and slightly charred, turning occasionally for about 8 minutes. Just put right on the grill or use a grill pan.
Remove to platter; drizzle with balsamic vinegar and the remaining oil.
Sprinkle with remaining salt and pepper.
