Cherry Lime Fig Chutney

Ingredients

  • 1.5 cups fresh or frozen cherries pitted
  • 2 tablespoon figs, finely chopped (or 2 tablespoon fig jam)
  • 2 tablespoon red wine vinegar
  • 1 tablespoon lime juice
  • zest of 1 lime finely grated
  • ½ teaspoon ground ginger
  • ½ teaspoon ground cardamom or nutmeg or allspice
  • 2 tablespoon water if needed
  • 1 tablespoon coconut sugar OPTIONAL..or 1 drop Stevia

Instructions

  1. In a small saucepan, add cherries, figs (or jam), vinegar, lime juice + zest, spices + 1 tablespoon water.

  2. Cover + simmer on low heat for about 20 minutes, until cherries have softened
  3. Remove lid, and continue to simmer until the mixture has thickened to honey consistency.
  4. I made this with fresh cherries but the thickening process could take longer if made with frozen cherries.
  5. When thickened, ladle into a glass bowl and refrigerate for at least 30 minutes.
  6. Serve at room temperature.
  7. Makes 310 ml or about 1.5 cups of yummy chutney!
