Fresh Horseradish Dressing

Add some zing to your next salad ~ greens or tuna, salmon or chopped egg OR enjoy as a delightful herby dip! Add a kick to your next 'crudite' platter!!

Ingredients

  • 2 cups plain yogurt non-fat or full fat..or non-dairy --your choice
  • 4 tablespoons dill freshly chopped
  • 1 tablespoon garlic scapes finely chopped^
  • 1 tablespoon horseradish freshly grated
  • 1 teaspoon apple cider vinegar or your favourite!*
  • Black pepper freshly ground
  • Sea Salt

Instructions

  1. Combine all ingredients together in a glass jar.
  2. Refrigerate.
  3. Shake well and use on salad greens
  4. Enjoy within 2 weeks.

Recipe Notes

^ I freeze some every spring so normally have a container on hand but do substitute finely chopped small scallion or minced chives if scapes not in season or in your freezer! *Why not make an herb-infused vinegar and use that? Check out this post for more info.
